- ½ tbsp coconut oil
- 250g ready-made turkey meatballs
- 200g tinned chopped tomatoes
- 2 tsp dried Italian herbs
- 1 large submarine roll
- ¼ red pepper, de-seeded and thinly sliced
- ¼ red onion, thinly sliced
- 1 tbsp jarred jalapeños, drained

- MAKE AHEAD
Melt the coconut oil in a medium frying pan over a high heat.
Drop in the meatballs and fry them for 1–2 minutes until they are starting to brown. Pour in the chopped tomatoes and sprinkle in the seasoning.
Place a lid (or a large plate if you don’t have a lid that fits) on the frying pan, bring the tomatoes to the boil and then simmer for about 5 minutes, or until you are satisfied the meatballs are totally cooked through. Check by cutting into one to make sure there are no raw pink bits of meat left.
Zap your sub roll in the microwave for about 30 seconds to soften it.
When the meatballs are ready, spoon them into the waiting sub and top with the red pepper, red onion slices and jalapeños.
