James Duigan: Nut and Seed Flapjacks Recipe

  2. 170g rolled oats
  3. 130g spelt flour
  4. 50g shredded coconut
  5. 50g raisins
  6. 25g chopped apricots
  7. 25g chopped prunes
  8. 20g pumpkin and sunflower seeds
  9. 100g coconut palm sugar
  10. 150g butter
  11. 2 tablespoons honey
  12. 1 tablespoon maple syrup
  13. butter, for greasing


Preheat the oven to 180ºC/gas mark 4. Grease a baking tray with butter or line it with baking paper.

Mix all the dry ingredients together in a bowl.

Melt the butter, honey and syrup in a small pan over a low heat, or in the microwave.

Mix the wet ingredients into the dry ingredients, then tip into the prepared tray and press firmly.

Bake for 15–20 minutes, or until golden brown on top. Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
