Emma Hannigan: Recipe for Warm Almond Tart

  2. 1 x 500g packet of frozen puff pastry
  3. Frangipane
  4. 100g soft butter
  5. 140g caster sugar
  6. 1 egg & 1 egg yolk
  7. 1 tablespoon of plain flour
  8. 100g ground almonds
  9. Egg Wash
  10. 1 egg yolk
  11. 1 tablespoon of runny cream

Warm Almond Tart

This tart is delicious with strong coffee, and always reminds me of my maternal grandmother. Of course you can make your own puff pastry from scratch, but it’s perfectly delicious and much quicker using the frozen variety!

Method

1. Heat the oven to 220°/gas 6

2. Cut two circles of pastry to approx. 25cm in diameter

3. Place one on a damp baking sheet and the other in the fridge

4. Make the frangipane (almond filling) by creaming the butter and caster sugar until soft and fluffy

5. Add the egg and yolk one at a time

6. Fold in the ground almonds and flour

7. Spoon the frangipane onto the pastry disc, leaving a 2.5cm border around the edge

8. Brush the border with water

9. Place the second pastry circle on top and seal the edges

10. Mix the egg yolk and cream to create the egg wash. Brush all over the top of the tart

11. Score the top with a sharp knife, creating an orange segment pattern

12. Bake in the pre-heated oven for 30 – 35 minutes or until the pastry is golden brown
